A blue flame is even, obedient, everywhere. We burn charcoal anyway — because radiant heat off live coals does what no dial can. It sears hard and fast. It renders fat into smoke and sends that smoke straight back into the meat. A crust with depth, an edge of char, a flavor you can’t fake.
